In articolul de astazi, ne-am propus sa facem ordine in informatiile legate despre zaharul ascuns in alimentatia tuturor, sa iti explicam de ce este acesta atat de daunator si cauzator de dependenta, sa te determinam sa citesti cu atentie <a href=\"https:\/\/www.sanovita.ro\/blog\/cum-citesti-corect-lista-de-ingrediente-pentru-a-face-alegeri-mai-sanatoase\/\" target=\"_blank\" rel=\"noopener noreferrer\">lista de ingrediente<\/a> de pe etichetele produselor din comert (atunci cand te afli la cumparaturi) si sa iti raspundem la unele dintre cele mai spinoase intrebari despre zahar.<\/p>\n<h2 style=\"text-align: left;\">Care este istoria zaharului procesat?<\/h2>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-16099 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2020\/03\/dulciuri.jpg\" alt=\"dulciuri\" width=\"696\" height=\"392\" srcset=\"https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2020\/03\/dulciuri.jpg 696w, https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2020\/03\/dulciuri-324x182.jpg 324w\" sizes=\"auto, (max-width: 696px) 100vw, 696px\" \/>Din punct de vedere evolutionist, zaharul adaugat este ceva nou in alimentatia umana. Acesta a fost produs prima data in Noua Guinee, in Evul Mediu, era scump, rar si \u2013 ca urmare \u2013 consumat doar de membrii caselor regale si de bogatii vremii. In perioada anilor 1500-1800, plantatiile de trestie si sfecla de zahar au crescut semnificativ, reducand costul produsului finit si crescand consumul, la nivel mondial. Se estimeaza ca, intre 1900 si 1970, consumul mediu de zahar in SUA si Marea Britanie s-a dublat. Astazi, dulciurile nu mai sunt o tratatie rezervata zilelor de nastere, aniversarilor si sarbatorilor, ci sunt consumate aproape la fiecare masa sau pe post de gustare.<\/p>\n<h2 style=\"text-align: left;\">Care este diferenta intre zahar natural si zahar adaugat?<\/h2>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-16100 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2020\/03\/pepene-galben.jpg\" alt=\"pepene galben\" width=\"696\" height=\"392\" srcset=\"https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2020\/03\/pepene-galben.jpg 696w, https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2020\/03\/pepene-galben-324x182.jpg 324w\" sizes=\"auto, (max-width: 696px) 100vw, 696px\" \/>Orice alimentatie include zaharuri naturale \u2013 ca fructoza din fructe, maltoza din orz, lactoza si galactoza din lactate \u2013 si zahar adaugat \u2013 orice tip de zaharuri si indulcitori incorporati intr-un produs, in timpul procesarii sau prepararii acestuia: de la zaharul pus in ceai sau in aluatul de prajituri, pana la lista complexa de indulcitori de pe etichetele din comert (concentrat din suc de fructe, sirop\/indulcitor de porumb, molasa, extract de malt, sirop\/molecule zaharoase de dextroza, lactoza, sucroza, fructoza, glucoza, maltoza).<\/p>\n<p style=\"text-align: justify;\">O cantitate mica de zahar imbunatateste gustul preparatelor tale si iti ofera energie, dar problema este ca e adaugat in exces in bauturi carbogazoase, ciocolata, biscuiti, iaurt indulcit, cereale pentru micul dejun, sosuri gata preparate, condimente si multe altele. \u00a0Asa ajungi sa mananci mai mult zahar decat iti dai seama si clar mai mult decat cantitatea recomandata de Organizatia Mondiala a Sanatatii: 5-10 g de zahar adaugat\/zi.<\/p>\n<blockquote class=\"td_quote_box td_box_center\">\n<p style=\"text-align: justify;\"><span style=\"color: #008000;\"><strong>Descopera <a href=\"https:\/\/www.sanovita.ro\/blog\/12-consecinte-negative-ale-consumului-excesiv-de-zahar-infografic\/\" target=\"_blank\" rel=\"noopener noreferrer\"><em>12 consecinte negative ale consumului excesiv de zahar<\/em><\/a>!<\/strong><\/span><\/p>\n<\/blockquote>\n<h2 style=\"text-align: left;\">De ce este zaharul cel mai nociv carbohidrat?<\/h2>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-16101 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2020\/03\/bomboane.jpg\" alt=\"bomboane\" width=\"696\" height=\"392\" srcset=\"https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2020\/03\/bomboane.jpg 696w, https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2020\/03\/bomboane-324x182.jpg 324w\" sizes=\"auto, (max-width: 696px) 100vw, 696px\" \/>Toti carbohidratii consumati de noi (fructe, legume, nuci, seminte, leguminoase, cereale integrale) sunt descompusi in corp in zaharuri. Dar zaharul adaugat nu contine nutrientii si fibrele din cele dintai (care incetinesc absorbtia zaharurilor, confera energie treptat si nu cresc glicemia brusc), ci doar calorii goale \u2013 la fel ca alcoolul. Consumat in cantitati mari, este toxic, da depenenta, nu ofera nutrienti benefici corpului si iti poate distruge ficatul.<\/p>\n<h2 style=\"text-align: left;\">Ce boli poate provoca zaharul adaugat in exces?<\/h2>\n<p style=\"text-align: justify;\">Zaharul adaugat contribuie la aparitia a numeroase boli cronice, ca obezitatea, diabetul de tip 2, bolile cardiovasculare, hipertensiunea si sindromul metabolic (noteaza studii din <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/15328324\" target=\"_blank\" rel=\"noopener noreferrer\">2004<\/a>,\u00a0<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/23493538\" target=\"_blank\" rel=\"noopener noreferrer\">2013<\/a>,\u00a0<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/24808490\" target=\"_blank\" rel=\"noopener noreferrer\">2014<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/24493081\" target=\"_blank\" rel=\"noopener noreferrer\">2014<\/a>):<\/p>\n<ul>\n<li>\n<p style=\"text-align: justify;\"><strong>glicemie ridicata <\/strong>\u2013 carbohidratii simpli (ca zaharul adaugat) sunt digerati rapid si au un impact majorasupra glicemiei<\/p>\n<\/li>\n<li>\n<p style=\"text-align: justify;\"><strong>rezistenta la insulina si hiperinsulinemie<\/strong> \u2013 <a href=\"https:\/\/www.sanovita.ro\/blog\/totul-despre-trigliceride-ce-sunt-care-este-nivelul-normal-cum-le-reduci-natural\/\" target=\"_blank\" rel=\"noopener noreferrer\">trigliceridele<\/a> create din excesul de fructoza sunt eliberate in sange sau acumulate in ficat (care, cand aduna prea multe, devine rezistent la insulina si nu mai poate regla glicemia); consecinta este ca pancreasul produce mai multa insulina pentru a compensa (hiperinsulinemie)<\/p>\n<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-13139 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2019\/07\/diabet-zaharat.jpg\" alt=\"diabet zaharat\" width=\"640\" height=\"426\" srcset=\"https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/07\/diabet-zaharat.jpg 640w, https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/07\/diabet-zaharat-324x216.jpg 324w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>\n<p style=\"text-align: justify;\"><strong>boala ficatului gras non-alcoolic <\/strong>\u2013 aportul mare de fructoza contribuie la depozitarea escesiva de trigliceride in ficat, iar bolnavii de aceasta afectiune convertesc fructoza in trigliceride mult mai rapid<\/p>\n<\/li>\n<li>\n<p style=\"text-align: justify;\"><strong>probleme digestive <\/strong>\u2013 alimentatia plina de zahar pot fi un factor de risc in aparitia si evolutia <a href=\"https:\/\/sanovita.ro\/blog\/sindromul-colonului-iritabil\/\">sindromului de colon iritabil<\/a> si bolii inflamatorii a intestinului, deoarece modifica microbiomul intestintal<\/p>\n<\/li>\n<li>\n<p style=\"text-align: justify;\"><strong>risc crescut de obezitate<\/strong> \u2013 zaharul, in special in forma lichida, duce la cresterea in greutate<\/p>\n<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-9355 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2018\/06\/cantar-e1578384820189.jpg\" alt=\"cantar\" width=\"696\" height=\"464\" \/><\/p>\n<ul>\n<li>\n<p style=\"text-align: justify;\"><strong>risc cardiovascular crescut<\/strong> \u2013 zaharul in exces scade <a href=\"https:\/\/www.sanovita.ro\/blog\/totul-despre-colesterol-tipuri-factori-de-risc-si-cum-pastrezi-nivelul-optim\/\" target=\"_blank\" rel=\"noopener noreferrer\">colesterolul<\/a> \u201ebun\u201d\/HDL si micsoreaza particulele de colesterol \u201erau\u201d\/LDL, ceea ce creste riscul de atac de cord<\/p>\n<\/li>\n<li>\n<p style=\"text-align: justify;\"><strong>risc de inflamatie crescut<\/strong> \u2013 cercetarile arata ca exista o legatura intre inflamatie si zahar, chiar daca aportulacetui din urma este moderat<\/p>\n<\/li>\n<li>\n<p style=\"text-align: justify;\"><strong>risc crescut de dementa<\/strong> \u2013 aportul ridicat de zahar poate creste sansele aparitiei bolii Alzheimer, glucoza afectand anumite zone cerebrale, in timp; descopera <a href=\"https:\/\/www.sanovita.ro\/blog\/cat-conteaza-genetica-si-cat-stilul-de-viata-in-aparitia-dementei\/\" target=\"_blank\" rel=\"noopener noreferrer\">cat conteaza genetica si cat stilul de viata in aparitia dementei<\/a>\u00a0si <a href=\"https:\/\/www.sanovita.ro\/blog\/5-obiceiuri-alimentare-care-iti-ajuta-creierul\/\" target=\"_blank\" rel=\"noopener noreferrer\">5 obiceiuri alimentare care iti ajuta creierul<\/a>, pe blogul Sano Vita<\/p>\n<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">S-a ajuns aici pentru ca industria zaharului a facut lobby agresiv, timp de zeci de ani, sustinand ca grasimile sunt cauza obezitatii. In SUA, politicienii au primit de la lobbyistii din domeniu 8 milioane $, in 2016. Conform unui studiu, 74% dintre alimentele procesate vandute intre 2005 si 2009 in supermarket-urile americane contineau zahar adaugat, de exemplu. Printre produsele din comert care pot contine multe lingurite de zahar adaugat se numara urmatoarele: paine feliata, crackers, batoane de cereale, cereale pentru micul dejun, iaurt cu arome si fara grasimi (care este promovat drept o alternativa sanatoase, dar in care se adauga zahar, pentru a compensa pierderea aromei si a gustului cremos), ketchup, dressing de salata, muraturi, suc de fructe si carbogazos, dulciuri de toate felurile.<\/p>\n<h2 style=\"text-align: left;\">Cum scapi de dependenta de zahar?<\/h2>\n<p style=\"text-align: justify;\">Cine este pasionat de dulciuri stie cat de reala este aceasta dependenta, care este influentata de genetica, mediul in care te formezi si experientele de viata proprii fiecaruia (ca orice alta dependenta). Studiile pe oameni si animale arata ca zaharul activeaza receptorii cerebrali de dopamina (substanta chimica ce contribuie la controlul centrilor placerii si recompensei), cum se intampla in cazul cocainei si al altor droguri similare.<\/p>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-16104 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2020\/03\/dependenta-de-zahar.jpg\" alt=\"dependenta de zahar\" width=\"696\" height=\"392\" srcset=\"https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2020\/03\/dependenta-de-zahar.jpg 696w, https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2020\/03\/dependenta-de-zahar-324x182.jpg 324w\" sizes=\"auto, (max-width: 696px) 100vw, 696px\" \/><\/p>\n<p style=\"text-align: justify;\">Pentru a reduce si \u2013 in cele din urma \u2013 a elimina zaharul adaugat din alimentatia ta, incepe sa urmezi urmatoarele reguli si obiceiuri, care iti vor intra in obisnuita, treptat:<\/p>\n<ul>\n<li>\n<p style=\"text-align: justify;\">cumpara cat mai rar produse din comert care contin zahar sau indulcitori adaugati si citeste intotdeauna lista de ingrediente pe care le contin (daca zaharul sau un indulcitor se numara printre primele 3 ingrediente listate pe o eticheta sau daca produsul are peste 15 g de zahar la 100 g, renunta la respectivul produs)<\/p>\n<\/li>\n<li>\n<p style=\"text-align: justify;\">inlocuieste produsele cu zahara daugat cu alternative sanatoase (bea apa cu lamaie in lo de suc; indulceste cerealele integrale simple cu fructe uscate; fa-ti inghetata in casa, din fructe dulci natural)<\/p>\n<\/li>\n<li>\n<p style=\"text-align: justify;\">consuma cat mai multe alimente integrale, neprocesate, bogate in grasimi sanatoase si saraca in carbohidrati<\/p>\n<\/li>\n<li>\n<p style=\"text-align: justify;\">limina toate dulciurile din casa si de la birou si roaga-ti apropiatii sa nu iti mai ofere \u201eceva bun\u201d si sa nu isi mai tina dulciurile la vedere<\/p>\n<\/li>\n<\/ul>\n<h2 style=\"text-align: left;\">Pot sa inlocuiesc zaharul adaugat cu indulcitorii artificiali?<\/h2>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-16105 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2020\/03\/cani-brunch.jpg\" alt=\"cani brunch\" width=\"696\" height=\"392\" srcset=\"https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2020\/03\/cani-brunch.jpg 696w, https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2020\/03\/cani-brunch-324x182.jpg 324w\" sizes=\"auto, (max-width: 696px) 100vw, 696px\" \/>Primul indulcitor artificial (zaharina) a fost descoperit din greseala de chimistul rus Constantin Fahlberg in 1879, care studia derivatii din carbune-smoala si s-a murdarit cu zaharina pe maini, iar apoi s-a lins pe degete. Apoi, zaharina a fost folosita la scara larga in Primul Razboi Mondial, cand s-a simtit acut lipsa de zahar.<\/p>\n<p style=\"text-align: justify;\">Indulcitorii artificiali (aditivi alimentari care, desi sunt folositi in cantitate mica si au 0 calorii, confera un gust dulce intens) \u2013 ca aspartamul, zaharina, acesulfamul, sucraloza, stevia si neotamul \u2013 pot parea o alegere buna. Dar au cateva puncte nevralgice: te ajuta sa consumi in continuare produse cu gust dulce (deci nu iti vei schimba preferintele); te pot determina sa inlocuiesti caloriile pierdute din alta sursa (iti spui ca bei suc cu 0 zahar, deci poti manca o felie de tort); pot schimba felul in care percepi gustul dulce (fiind atat de puternici, suprastimuleaza receptorii gustului dulce); pot provoca dependenta (conform studiilor pe animale); pot creste riscul de diabet zaharat cu 67% si de sindrom metabolic cu 36% (noteaza studii din <a href=\"http:\/\/care.diabetesjournals.org\/content\/32\/4\/688\" target=\"_blank\" rel=\"noopener noreferrer\">2009<\/a> si \u00a0<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/28716847\" target=\"_blank\" rel=\"noopener noreferrer\">2017<\/a>), pot influenta negativ toleranta la glucoza (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/25231862\" target=\"_blank\" rel=\"noopener noreferrer\">2014<\/a>) si microbiomul intestinal (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/27090230\" target=\"_blank\" rel=\"noopener noreferrer\">2016<\/a>).<\/p>\n<div id=\"highlighter--hover-tools\" style=\"display: none;\">\n<div id=\"highlighter--hover-tools--container\">\n<div class=\"highlighter--icon highlighter--icon-copy\" title=\"Copy\"><\/div>\n<div class=\"highlighter--icon highlighter--icon-change-color\" title=\"Change Color\"><\/div>\n<div class=\"highlighter--icon highlighter--icon-delete\" title=\"Delete\"><\/div>\n<\/div>\n<\/div>\n<div id=\"highlighter--hover-tools\" style=\"display: none;\">\n<div id=\"highlighter--hover-tools--container\">\n<div class=\"highlighter--icon highlighter--icon-copy\" title=\"Copy\"><\/div>\n<div class=\"highlighter--icon highlighter--icon-change-color\" title=\"Change Color\"><\/div>\n<div class=\"highlighter--icon highlighter--icon-delete\" title=\"Delete\"><\/div>\n<\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Pe blogul Sano Vita am scris deja numeroase articole despre zahar (fie el alb sau adaugat), zahar brut, care sunt alternativele naturale la zahar, pentru o alimentatie sanatoasa sau care sunt indulcitorii cei mai buni pentru tine.
