Dar ce a rezultat a fost o intelegere faustiana, pentru ca pe piata din SUA au fost promovate margarina si uleiurile procesate industrial (vegetale, partial hidrogenate), care numai sanatoase nu sunt, dezvaluie cartea \u201eThe Longevity Solution: Rediscovering Centuries-Old Secrets to a Healthy, Long Life\u201d (aparuta in 2019). Volumul scris de James DiNicolantonio (cercetator cardiovascular si doctor in farmacie) si Jason Fung (doctor si autor de bestseller) povesteste ca totul a inceput in secolul XVIII, pe plantatiile de bumbac.<\/p>\n<h2 style=\"text-align: left;\">Istoria uleiului din seminte de bumbac<\/h2>\n<p style=\"text-align: justify;\">Plantatiile de bumbac (destinate productiei de material textil) au aparut in SUA inca din 1736, bumbacul fiind pana atunci doar o planta ornamentala. Tors in casa si transformat in fire, bumbacul a avut rapid succes, prin urmare a inceput sa fie exportat si in Marea Britanie (impulsionand Revolutia Industriala): de la 272 kg de bumbac cultivat in 1784, s-a ajuns la peste 90.700 kg, 1790.<\/p>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-14335 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2019\/11\/bumbac.jpg\" alt=\"bumbac\" width=\"640\" height=\"426\" srcset=\"https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/11\/bumbac.jpg 640w, https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/11\/bumbac-324x216.jpg 324w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/>Apoi, in 1793, Eli Whitney a revolutionat productia de bumbac: a inventat un dispozitiv care separa semintele de fibrele pure. Brusc, un proces manual extrem de complicat putea fi facut rapid si usor, cu ajutorul unei masini (iar exportul a crescut la 230.000 kg, in anul respectiv, la 42.000 de tone, in 1810). Agricultura statelor sudiste si economia nationala au fost transformate (sclavii fiind mana de lucru utilizata la recoltare), iar proprietarii americani de plantatii aflati in cautarea unei recolte stabile si profitabile au mizat pe bumbacul usor de depozitat si transportat, care a devenit principalul produs de export american.<\/p>\n<p style=\"text-align: justify;\">Dar dupa prelucrarea bumbacului, la fiecare 45 kg de fibre ramaneau 75 kg de seminte de bumbac, din care doar 5% erau folosite pentru replantare. Restul era fie folosit pe post de hrana pentru animale, fie aruncat ilegal in rauri sau lasat sa putrezeasca. In paralel, in 1820-1830, populatia americana in crestere avea tot mai mare nevoie de ulei pentru iluminat si gatit, iar pretul uleiului de balena a crescut semnificativ. Abia in 1850, tehnologia a permis extragerea uleiului din semintele de bumbac si productia comerciala a inceput. Dar, dupa doar 9 ani, colonelul Edwin Drake a descoperit petrolul, in Pennsylvania, dand nastere dependentei moderne de combustibili fosili si stingand apetitul pentru uleiul din seminte de bumbac, care au fost din nou clasificate drept resturi toxice. Resturi care au fost insa introduse ilicit in consumul uman, de catre \u201ebaietii destepti\u201d locali.<\/p>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-14336 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2019\/11\/gatit-bucatarie.jpg\" alt=\"gatit bucatarie\" width=\"640\" height=\"402\" srcset=\"https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/11\/gatit-bucatarie.jpg 640w, https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/11\/gatit-bucatarie-324x204.jpg 324w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/>Cu aroma sa usoara si culoarea lui galbena, uleiului din seminte de bumbac a fost amestecat cu uleiul de masline (in consecinta, Italia a interzis complet importul de ulei de masline american, in 1883). Compania Procter &amp; Gamble (fondata in 1837, de doi fabricanti de sapun) a produs din el lumanari si sapun, pana a descoperit ca poate hidrogena partial uleiul, printr-un proces chimic, transformandu-l intr-o grasime solida asemanatoare unturii si extrem de versatila in bucatarie, botezata \u201eCrisco\u201d (practic, P&amp;G a produs grasimi trans, fara a sti cat de nocive sunt aceste pentru consumul uman).<\/p>\n<p style=\"text-align: justify;\">Promovat drept o alternativa mai ieftina la untura, aceast \u201eulei cristalizat din seminte de bumbac\u201d a ajuns in toate casele americanilor din 1911 incolo, cand compania a publicat si distribuit gratuit o carte de bucate care utiliza Crisco, promitand in reclame ca produsul e mai usor de digerat si mai sanatos, datorita originii sale vegetale. In urmatorii 30 de ani, uleiul din seminte de bumbac a fost omniprezent in bucatariile americane.<\/p>\n<h2 style=\"text-align: left;\">Istoria uleiului de soia<\/h2>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-14337 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2019\/11\/soia.jpg\" alt=\"soia\" width=\"640\" height=\"480\" srcset=\"https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/11\/soia.jpg 640w, https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/11\/soia-324x243.jpg 324w, https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/11\/soia-80x60.jpg 80w, https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/11\/soia-265x198.jpg 265w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/>In anii \u201950, productia de ulei din seminte de bumbac s-a scumpit, iar alternativa mai ieftina a devenit uleiul de soia. Boabele de soia, cultivate in China inca din anul 7.000 i.Hr., au fost introduse in America de Nord in 1765. Inainte de Al Doilea Razboi Mondial americanii nu mancau soia, care este compusa in proportie de 38% din proteine si in proportie de 18% din ulei, fiind perfecta pentru animale si industrie (vopseluri si lubrifianti). Dar in timpul Marii Depresiuni, cand zone mari din SUA au fost afectate de o seceta severa, soia a fost plantata pentru a regenera pamanturile (planta fixeaza azotul in sol) si a devenit a doua cea mai rentabila recolta, dupa porumb.<\/p>\n<p style=\"text-align: justify;\">In 1924, un grup de specialisti cardiologi au infiintat American Heart Association, intalnindu-se periodic, pentru a discuta probleme legate de profesia lor. Un sfert de secol mai tarziu, in 1948, AHA a fost transformata de o donatie de capital de 1,5 milioane $ din partea Procter &amp; Gamble. Primele recomandari oficiale ale AHA au fost redactate in 1961: americanii erau sfatuiti sa reduca aportul de grasimi totale, saturate si colesterol si sa creasca aportul de grasimi polinesaturate, cum sunt uleiurile vegetale.<\/p>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-14338 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2019\/11\/margarina.png\" alt=\"margarina\" width=\"640\" height=\"402\" srcset=\"https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/11\/margarina.png 640w, https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/11\/margarina-324x204.png 324w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/>In aceeasi perioada, cercetatorul Ancel Keys facea publice date care sugereau o legatura intre aportul de grasimi saturate si bolile de inima, iar acesta recomanda consumul de acizi grasi polinesaturati (PUFA). In scurt timp, numeroase organizatii medicale recomadnau si ele uleiurile vegetale procesate: National Cholesterol Education Program, National Institute of Health, Center for Science in the Public Interest. Acesta din urma a promovat uleiurile hidrogenate si margarina, declarandu-le \u201eun mare plus pentru arterele americanilor\u201d, in 1994 speriind cinefilii cu o campanie care blama <a href=\"https:\/\/www.sanovita.ro\/blog\/uleiul-de-cocos-te-ajuta-la-slabit-iata-cum-se-foloseste\/\" target=\"_blank\" rel=\"noopener noreferrer\">uleiul de cocos<\/a>. CSPI-ul sustinea ca o punga medie de popcorn are \u201emai multa grasime care blocheaza arterele decat un mic dejun cu sunca si oua, un pranz constand intr-un Big Mac si cartofi prajiti, o cina cu friptura si toate garniturile aferente la un loc\u201d! cinematografele s-au grabit sa inlocuiasca uleiul de cocos cu ulei vegetal partial hidrogenat (care inlocuise deja untura din reteta de cartofi prajiti a companiei McDonald\u2019s).<\/p>\n<p style=\"text-align: justify;\">In anii \u201990, grasimile trans promovate de AHA si CSPI au fost studiate atent, iar rezultatele au fost de speriat: cercetatorii au descoperit ca inlocuind doar 2% din caloriile venite din grasimi trans cu grasimi nesaturate si nehidrogenate reduc riscul de boli cardiace cu 53% (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/9366580\" target=\"_blank\" rel=\"noopener noreferrer\">1997<\/a>). Dar abia in 2013 US Food and Drug Administration a eliminat uleiul partial hidrogenat de pe lista alimentelor sigure pentru consumul uman, iar in 2018 a interzis grasimile trans din toate restaurantele si produsele vandute in supermaketuri.<\/p>\n<h2 style=\"text-align: left;\">Uleiuri vegetale sanatoase vs. uleiuri vegetale nocive<\/h2>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-12479 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2019\/05\/ulei-de-masline.jpg\" alt=\"ulei de masline\" width=\"640\" height=\"489\" srcset=\"https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/05\/ulei-de-masline.jpg 640w, https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/05\/ulei-de-masline-324x248.jpg 324w, https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/05\/ulei-de-masline-636x486.jpg 636w, https:\/\/beta.sanovita.ro\/blog\/wp-content\/uploads\/2019\/05\/ulei-de-masline-80x60.jpg 80w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/>Toate sursele naturale de grasimi contin un amestec de grasimi saturate, mononesaturate si polinesaturate, in proportii diferite. Uleiurile vegetale presate la rece (din diverse seminte), uleiul de cocos si uleiul de masline contin antioxidanti si acid oleic, nu sunt prelucrate industrial, lichidul fiind extras fara a apela la caldura si chimicale. Citeste mai multe despre uleiul presat la rece in articolul Sano Vita de <a href=\"https:\/\/www.sanovita.ro\/blog\/de-ce-folosesti-ulei-presat-la-rece-in-bucataria-ta\/\" target=\"_blank\" rel=\"noopener noreferrer\">aici<\/a>!<\/p>\n<p style=\"text-align: justify;\">Uleiurile vegetale rafinate (uleiul de seminte de bumbac, uleiul de soia, uleiul de rapita, uleiul de porumb, uleiul de sofranel, uleiul de arahide) sunt bogate in acid linoleic, un tip de Omega-6 creat industrial, diferit de acidul linoleic prezent in alimentele integrale.
